Ingredients
- 1 lb. chicken breasts, cooked and diced
- 3 c. long grain rice, prepared
- 12-16 oz. frozen peas & carrots
- 4 eggs, scrambled
- 1 lg. onion, diced
- Olive Oil for cooking
- *Soy sauce, optional

Directions
In large sauce pan, along with prepared rice, add diced chicken and mix thoroughly.
In large skillet, add 2 Tbls. olive oil to pan. Once hot, add diced onion. When onions are transluscent in color, add frozen peas & carrots. Stirring all along. Can add more oil if needed. Add scrambled eggs, stirring rapidly.
Once eggs are cooked all the way through, add skillet mixture to large sauce pan mixture and stir to combine.
*You can add soy sauce to this, and mix within' or leave out.
